Kids & Lunches

I used to dread packing my kids lunches; truly it was the hardest part of my day.  I found an incredible Blogger, who has some fantastic lunch ideas for kids. Take a look at this one.  This looks so delicious and they say it's easy and quick to make!! The Cool Moms Pick has so many lunch ideas that I think your going to have a hard time deciding. Blueberry or Saskatoon berry pie
Berry pies can be made using any combination of berries in season; Saskatoon berries are abundant in most prairie provinces. Feel free to swap your favourite seasonal berries, keeping in mind that the juicier the berry, the more cornstarch you’ll need.

Ingredients:

Pastry for a double-crust pie

Filling: 

2/3 cup (185 ml) sugar
3 tbsp (45 ml) cornstarch
pinch salt
4 cups (1 L) fresh blueberries or Saskatoon berries, or a combination
1 cup (250 ml) fresh raspberries or blackberries (optional)
1 tbsp (15 ml) butter

Directions:
1. Preheat the oven to 425˚F. Divide the pastry in half, making one piece slightly larger than the other. On a lightly floured surface, roll the larger piece out into a 10-inch circle. Gently transfer to a pie plate, letting the excess pastry hang over the edge.

2. In a small bowl, stir together the sugar, cornstarch and salt to get rid of any lumps. In a large bowl, toss together the berries; sprinkle with the sugar mixture and gently toss to coat them well.

3. Pour the berry mixture into the bottom pastry and dot them with bits of butter. Roll out the second piece on a lightly floured surface to a 10-inch circle. If you like, cut out a few decorative steam holes with a small shaped cutter. Gently place over the pie and trim the edges (use scissors or a sharp knife), leaving about a 1/2-inch overhang. Fold the edge of the crust over itself and crimp it, pinching it to seal all the way around the edge. Cut a few slits in the surface to allow steam to escape if you haven’t cut holes in the top crust already.

4. Bake on a rimmed baking sheet for 40–45 minutes, until golden and bubbly; cover the edge of the pie with strips of foil if it starts to brown too quickly. Cool in the pan on a wire rack.

Makes 1 pie; serves about 8.

The Healthy Hybrid

I came across this incredible Facebook site called, “The Healthy Hybrid” because I’ve been looking for a dietary change that suits my family and brings us closer to great health. I haven’t started any particular diet yet but my plan is to go Paleo. I may end up moderately Mediterranean, radiantly raw and vaguely vegan. I will certainly be gloriously gluten free, seriously sugar free.

Small-fry Picks: MAC & CHEESE

Some days I wake up with crazy cravings, like today!  I woke up this morning and all I could think about was mac and cheese.?! I don't have any craft dinner in my cupboards, so it looks like I'm going to be making homemade max & cheese. I'm always trying to think of ways to make things that I cook a little more interesting. Here's my mac & cheese.

Mac & Cheese
1 cup of elbow noodles, 1 cup milk, 1/4 cup butter, cheese (as much as you like), 2 tbsp flour, 1 table spoon mustard, a dash worcestershire, pepper and hamburger meat (as much as you want)

In medium sauce pan melt butter then add flour, slowly add milk and whip until you have a nice creamy consistency. Add mustard, worcestershire, pepper and then slowly add the cheese, I used 1-1/2 cups of cheese. Stir until creamy. In a frying pan cook hamburger until brown and cooked through and let simmer. In another pan bring water to a boil and add the noodles, cook until done.

Now it's time to bring everything together. Pour cheese sauce over top of the noodles and then add hamburger. So good and my craving has been satisfied. Small-fry Picks:Baked Apples

So many apples in my fridge and no one is eating them. We are having a family gathering tonight, so I will try to entice them to eat my baked apples. I found my kid's grandmother's old cook book; Woman's Home Companion Cook Book, published in 1942. This is a cook book that I hope my kids one day will cherish as much I do. From this very old book.., here is the recipe for "Baked Apples." For this recipe we will be peeling the apples so that the kids will eat them.

Small-fry Picks: Grandma's Nachos

I may not be the greatest cook in the world, but the kitchen is my favourite place in the house. I'm garlic crazy and I can't get enough pepper, I'm sure that's the only reason my food tastes so good.

Who doesn't LOVE cinnamon rolls? This treat can be eaten in any season and It's one of my favourite treats ever! This is my family recipe.., I made this for my kids only for a special occasion and now I'm going to share this recipe with you "My bloggers." Your kids will love these, in fact you'er going to have a hard time saying "no" to these.

Small-fry Picks: Mint Cookies

So Ezzzz! Here are the ingredients that you will need..


Icing sugar, chocolate chips, mint flavouring, green food colouring, and condense sweetened milk.


Mix together 4 1/2 cups confectioners sugar,  8 to 9  table spoons of sweetened condensed milk,
a few drops of mint and food colouring.  Mix until you can form a ball. Add small amounts of condensed milk if needed, be careful not to add too much or it will turn creamy very quickly.


 Start to cut out your cookies.., using your choice of cookie cutter.


 Melt your chocolate and start dipping.  So delicious.., package them up and share with friends!!

Small-fry Picks: Summer Foods

Summer time brings summer food... you think potato salad, cobblers and pies, and fresh fruit. All cold and refreshing from the hot sun, thus bringing me to Summer Rolls. This simple and light meal can be made in oh so many ways. Here's one of them...

Summer Rolls
Total time: 30 minutes
Yields: 16 rolls, 6-8 servings



Ingredients:
1 bag of dried rice noodles
30 medium cooked shrimp
16 large round rice paper
1 bunch of lettuce
1 bunch of cilantro or basil
1 bunch of mint
scallions, cut into 4-inch pieces

Directions:
Bring a medium pot of water to a boil. Drop in the rice noodles. Remove the pan from heat and let stand for 8-10 minutes. Rinse with cold water to stop the cooking. You should have about 4 cups of cooked noodles. Peel the shrimp and cut them in half lengthwise.

 

Soak the rice paper for 15-30 seconds in a saucepan with warm water. 1 rice paper each time or they will stick together. Shake off remaining water and place on a cutting board. Arrange the greens and rice noodles about an inch from one end. Make first roll and add the shrimp, finish rolling, cut in half, and serve with your favourite dipping sauce. Fry or deep fry if necessary. Enjoy!

Small-fry Picks: EZ...Cheese Crackers

Hey, we found this great recipe from, www.101cookbooks.com  The picture are gorgeous and the crackers are delicious:  So yummy, kids will love them, I know my husband does and he's the biggest kid in the house.

Ingredients: 3 Tbsp. butter, cut into cubes ( plus additional for baking.) 1-1/2 C. Flour (plus more for the counter.) 1- tsp grain salt, 1- C cheddar cheese, 2- tsp white wine vinegar, dry mustard and a 1 ice cube.


Combine the butter, four, dry mustard, and salt into a bowl of a mix-master. Mix on low speed
until the mixture is crumbly and the butter starts to integrate into the mixture, about 30 seconds.
Add the cheese and mix again on low speed for a few seconds.


In another bowl, combine 3/4 cup water, the vinegar, and the ice cube, and let set for a moment to get cold. Add 6 tablespoons of the vinegar mixture to the dough and mix on medium speed for 20 seconds, 1 tablespoon at a time, until the tough clings in a ball to the beater. Then mix for an additional 30 seconds. Mound the dough into a ball, wrap it in waxed paper or plastic wrap, and refrigerate for at least two hours, and up a days, or not.


Remove the dough from the refrigerator 15 minutes before you are ready to roll it out.  Preheat the oven to 325 F. and grease two baking sheets. Turn out the dough onto a floured surface, press into a flat disc and roll it with a rolling pin until the dough is 1/8 - inch thick. Cut into desired shapes using a knife or cutter. Any leftover dough can be rerolled for more crackers.


With a spatula, transfer the crackers to the prepared baking sheets, allowing nearly an inch between crackers. If you're adding seeds as an accent, press them gently in place now. Bake until the bottoms are brown, and the tops takes on a good amount of colour as well about 18-25 minutes depending on how thick your crackers actually are. 

Allow to cool down for 20 minutes and it makes 3 -4 dozen.  Enjoy!
